- Heat the olive oil in a large skillet over medium heat. Add the garlic and orzo; stir frequently for about 2 minutes until the orzo looks lightly golden.
- Pour in the broth, stir, and bring to a boil. Reduce the heat to a gentle simmer and cook uncovered for 10 minutes, stirring occasionally, until the orzo is tender and most liquid is absorbed.
- Remove from heat. Stir in the cream cheese and parmesan until smooth and creamy. Season with salt and pepper.
- Stir in the lemon juice and a pinch of lemon zest. Serve warm with extra parmesan on top.
Notes
The sauce thickens as it sits. To reheat leftovers, add a splash of broth or milk and warm gently. This recipe doubles easily in a wider pan without changing the cook time.
