Creamy Orzo Pasta Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 cup dried orzo
  • 2 ½ cups low-sodium vegetable or chicken broth
  • 2 oz cream cheese, softened
  • ¼ cup grated parmesan cheese
  • 1 tbsp fresh lemon juice
  • Salt and freshly ground black pepper

Method
 

  1. Heat the olive oil in a large skillet over medium heat. Add the garlic and orzo; stir frequently for about 2 minutes until the orzo looks lightly golden.
  2. Pour in the broth, stir, and bring to a boil. Reduce the heat to a gentle simmer and cook uncovered for 10 minutes, stirring occasionally, until the orzo is tender and most liquid is absorbed.
  3. Remove from heat. Stir in the cream cheese and parmesan until smooth and creamy. Season with salt and pepper.
  4. Stir in the lemon juice and a pinch of lemon zest. Serve warm with extra parmesan on top.

Notes

The sauce thickens as it sits. To reheat leftovers, add a splash of broth or milk and warm gently. This recipe doubles easily in a wider pan without changing the cook time.
