Creamy One-Pot Vegan Hamburger Helper Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 12 oz vegan ground crumbles
  • 2 tbsp tomato paste
  • 1 tsp smoked paprika
  • ½ tsp chili powder
  • ½ tsp ground cumin
  • 2 cups (16 fl oz) vegetable broth
  • 1 cup (8 fl oz) unsweetened plain almond milk
  • 2 cups (8 oz) elbow macaroni
  • 1 cup vegan cheddar shreds
  • 2 tbsp nutritional yeast
  • Salt and black pepper

Method
 

  1. Heat oil in a large skillet over medium-high heat. Add onion and cook 3 minutes until soft, then stir in garlic for 30 seconds. Add crumbles, break them apart, and cook until browned, about 5 minutes.
  2. Push the mixture to one side, add tomato paste and spices, and toast for 1 minute, then stir everything together.
  3. Pour in broth and milk, season with salt and pepper, and bring to a boil. Stir in macaroni, reduce heat to a simmer, cover partially, and cook 10 to 12 minutes until pasta is tender, stirring occasionally.
  4. Remove from heat. Stir in vegan cheddar and nutritional yeast until melted and creamy. Adjust seasoning and serve immediately.

Notes

For an extra protein boost, fold in a half cup of rinsed, canned kidney beans or black beans with the crumbles. If the sauce thickens too much before the pasta is done, add a splash of warm broth.
