Creamy One-Pot Sausage Penne Pasta Recipe

Ingredients
  

  • 2 tbsp olive oil
  • 1 lb Italian sausage, casings removed
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 2 cups chicken broth
  • 8 oz penne pasta
  • 1/2 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper

Method
 

  1. Heat olive oil in a large pot over medium-high. Brown the sausage, breaking it up, for 6 to 8 minutes.
  2. Lower heat to medium. Cook onion for 3 minutes until soft, then add garlic and cook 30 seconds.
  3. Add tomatoes, broth, and penne. Bring to a boil, cover, reduce heat to low, and simmer for 12 to 15 minutes, stirring occasionally.
  4. Remove from heat. Stir in cream and spinach until wilted, about 1 minute. Fold in Parmesan and season with salt and pepper.
  5. Spoon into bowls and top with extra Parmesan and black pepper.

Notes

The pasta continues to absorb liquid as it sits, so the sauce will be thickest right after cooking. If you plan to eat later, leave it a little saucier than you think you need.
