Creamy One Pot Marry Me Chicken Pasta Recipe

Ingredients
  

  • 1 lb boneless skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • ½ cup oil-packed sun-dried tomatoes, drained and chopped
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 8 oz dried penne pasta
  • ½ cup finely grated Parmesan cheese
  • 2 cups fresh baby spinach
  • Salt and black pepper to taste
  • Fresh basil, for garnish

Method
 

  1. Heat olive oil in a large deep skillet over medium-high heat. Season chicken with salt and pepper, then brown for about 5 minutes until golden. Remove from pan.
  2. Lower heat to medium, add garlic, sun-dried tomatoes, oregano, and red pepper flakes. Sauté for 1 minute until fragrant.
  3. Pour in chicken broth and heavy cream, bring to a boil. Add penne and return chicken to the pot. Reduce heat to medium-low and simmer, stirring occasionally, for 12–15 minutes until pasta is tender and sauce thickens.
  4. Remove from heat, stir in Parmesan and spinach until wilted. Serve immediately with extra Parmesan and fresh basil.

Notes

Leftovers thicken as the pasta absorbs the sauce; reheat with a splash of broth to loosen. If you want to prep ahead, chop the chicken and aromatics and store them separately in the fridge up to a day in advance.
