Creamy One Pot Mac and Cheese Recipe

Ingredients
  

  • 8 oz elbow macaroni
  • 2 cups whole milk
  • 1 cup water
  • 2 tbsp unsalted butter
  • 1 tsp kosher salt
  • ΒΌ tsp mustard powder
  • 8 oz sharp cheddar cheese, shredded
  • 2 oz cream cheese, softened

Method
 

  1. Combine the milk, water, macaroni, salt, and mustard powder in a large pot. Bring to a boil, then reduce the heat and simmer until the pasta is tender and most of the liquid has been absorbed, about 8-10 minutes.
  2. Remove from the heat and stir in the butter until melted.
  3. Add the shredded cheddar and cream cheese gradually, folding until smooth and creamy.
  4. Serve immediately in bowls with a crack of black pepper or a sprinkle of paprika.

Notes

For the best texture, shred your own cheese from a block. Leftovers can be reheated with a splash of milk to restore the creaminess.
