Creamy One Pot Kielbasa Pasta Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 14 oz smoked kielbasa, sliced into half-moons
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 8 oz uncooked penne pasta
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • fresh parsley for garnish (optional)

Method
 

  1. Heat olive oil in a large deep skillet over medium-high heat. Add kielbasa and cook 4 minutes until browned, then add onion and cook 3 minutes. Stir in garlic and cook 1 minute until fragrant.
  2. Pour in broth and tomatoes, then stir in paprika, salt, and pepper. Bring to a boil. Add penne, stir, cover, and reduce heat to medium-low.
  3. Cook 12 to 14 minutes, stirring every 4 minutes, until pasta is al dente and liquid is thick and creamy.
  4. Remove from heat, stir in heavy cream and Parmesan until melted. Garnish with parsley and extra Parmesan, then serve hot.

Notes

Grate the Parmesan fresh for a sauce that melts silky and smooth. If the pasta finishes cooking before most of the liquid is absorbed, remove the lid and let it bubble uncovered for a minute to thicken faster.
