Creamy One-Pot Ground Beef Pasta Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb lean ground beef (85/15)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 can (15 oz) crushed tomatoes
  • 3 cups beef broth
  • 8 oz uncooked short pasta (penne, rigatoni, or rotini)
  • 1 tsp Italian seasoning
  • 1/2 tsp salt, plus more to taste
  • black pepper
  • 1/4 cup heavy cream
  • 1/3 cup grated Parmesan, plus more for serving
  • fresh parsley, for serving (optional)

Method
 

  1. Heat olive oil in a large Dutch oven over medium-high heat. Brown the ground beef, breaking it up, about 5 minutes. Drain off most of the fat.
  2. Push beef aside and cook onion until translucent, about 3 minutes. Add garlic and tomato paste; cook 1 minute more.
  3. Stir in crushed tomatoes, beef broth, Italian seasoning, salt, and pepper. Scrape up any browned bits.
  4. Bring to a boil, add pasta, then reduce to a simmer. Cook uncovered, stirring often, until pasta is tender and liquid is mostly absorbed, 12-15 minutes.
  5. Remove from heat. Stir in cream and Parmesan until melted. Serve hot with extra Parmesan and parsley.

Notes

For a little heat, add 1/4 tsp crushed red pepper flakes with the garlic. If you’d like a baked finish, transfer the pasta to a casserole dish, top with a handful of shredded mozzarella, and broil for 2-3 minutes until bubbly and golden.
