Ingredients

  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 3 garlic cloves, minced
  • 2 cups low-sodium beef broth
  • 1 can (28 oz) crushed tomatoes
  • 1/2 cup heavy cream, room temperature
  • 2 tsp Italian seasoning
  • 1/2 tsp salt, plus more to taste
  • 1/4 tsp black pepper
  • 8 oz uncooked pasta (penne, rotini, or shells)
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley, for serving

Method

  1. Brown the beef in a large Dutch oven over medium-high heat, about 5-7 minutes, then set aside, leaving 1 tbsp fat in the pot.
  2. Sauté the onion over medium heat until soft, 3-4 minutes, then add the garlic and Italian seasoning and cook 30 seconds.
  3. Return beef, then stir in broth, crushed tomatoes, and pasta. Add salt and pepper. Bring to a boil.
  4. Reduce heat, cover, and simmer until pasta is tender, about 12-15 minutes, stirring once or twice.
  5. Remove from heat, stir in cream and Parmesan until melted. Serve topped with more cheese and fresh basil.

Notes

The pasta will soak up extra liquid as it sits, so when reheating leftovers, add a splash of broth or water to bring back the creamy texture. If your sauce bubbles too aggressively during simmering, lower the heat a notch to keep it gentle.
