Ingredients

  • 1 lb ground beef
  • 8 oz cremini mushrooms, sliced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 4 cups beef broth
  • 12 oz wide egg noodles
  • ½ cup sour cream
  • 2 tbsp chopped fresh parsley (optional)

Method

  1. Brown the ground beef in a large heavy skillet over medium-high heat, about 5 minutes. Drain excess fat if needed.
  2. Add the sliced mushrooms and diced onion; cook until softened and golden, about 6 minutes. Stir in the garlic and cook 1 minute more.
  3. Pour in the beef broth and Worcestershire sauce, bring to a boil, then add the egg noodles. Reduce to a simmer and cook, stirring occasionally, for 8 minutes until the noodles are tender and most of the liquid is absorbed.
  4. Remove from heat, let cool 1 minute, then fold in the sour cream until creamy. Season with salt and pepper to taste, garnish with parsley, and serve hot.

Notes

This dish is best served right away. Leftovers will thicken as the noodles absorb liquid; reheat with a splash of broth. If using lean ground beef, add a teaspoon of oil to the pan before browning.
