Creamy One Pot Cajun Pasta Recipe

Ingredients
  

  • 2 tbsp olive oil
  • 12 oz andouille sausage
  • 1 lb boneless skinless chicken breasts
  • 1 tbsp Cajun seasoning
  • 1 small yellow onion
  • 1 red bell pepper
  • 3 cloves garlic
  • 8 oz penne pasta
  • 1 (14.5 oz) can diced tomatoes
  • 2 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 green onions

Method
 

  1. Brown the sliced sausage in 1 tablespoon of oil, set aside. Sear the chicken chunks with half the Cajun seasoning in the remaining oil, then remove.
  2. Cook the onion and bell pepper in the same pot until softened. Add the garlic and remaining seasoning, cook briefly.
  3. Stir in the tomatoes, broth, and uncooked penne. Bring to a boil, then simmer covered for 11 to 13 minutes, stirring once.
  4. Remove from heat, stir in the cream, Parmesan, and reserved sausage. Let sit for 2 minutes, then serve with green onions.

Notes

The sauce will continue to thicken as it cools, so letting the pot rest off the heat for a couple of minutes gives you that clingy, creamy consistency. If the pasta seems too dry after sitting, stir in a splash of warm broth or milk when reheating.
