Creamy One-Pot Broccoli Mac and Cheese Recipe

Ingredients
  

  • 8 oz elbow macaroni
  • 3 cups broccoli florets
  • 2 tbsp unsalted butter
  • 2 cups whole milk
  • 1 cup water
  • 1/2 tsp garlic powder
  • 1/2 tsp mustard powder
  • 1/4 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz sharp cheddar cheese, freshly grated
  • 2 oz cream cheese, softened

Method
 

  1. Combine the macaroni, milk, water, butter, garlic powder, mustard powder, paprika, salt, and pepper in a large pot. Bring to a gentle simmer over medium heat, stirring often. Cook for 6 minutes.
  2. Stir in the broccoli and continue simmering for 4 to 5 minutes, stirring frequently, until the pasta is al dente and the broccoli is bright green.
  3. Reduce heat to low. Add the cream cheese and stir until melted, about 1 minute. Add the shredded cheddar a handful at a time, stirring constantly until smooth.
  4. Remove from heat, taste and adjust seasoning, then serve hot with a sprinkle of paprika.

Notes

The sauce will continue to thicken as it cools. If reheating leftovers, add a splash of milk and warm gently on the stove. For the creamiest result, grate your own cheese right before you start.
