- Season the chicken thighs with salt and pepper. Heat the olive oil in a large Dutch oven over medium-high heat, then sear the chicken skin-side down for about 5 minutes. Flip and cook 4 minutes more, then transfer to a plate.
- Reduce the heat to medium, add the butter, mushrooms, and onion. Cook for about 5 minutes until the mushrooms release their liquid and start to brown. Stir in the garlic and thyme, cooking for 1 minute.
- Pour in the chicken broth and scrape up any browned bits. Stir in the heavy cream and Parmesan, bring to a simmer, then nestle the chicken back in skin-side up. Cover and simmer on low for 18 to 22 minutes, until the chicken reaches 165°F (74°C).
- Uncover, spoon the sauce over the chicken, scatter with parsley, and serve hot.
Notes
If your chicken thighs are very large, the simmer time may lean closer to 22 minutes. Let the dish rest off the heat for a couple of minutes before serving; the sauce will set up slightly as it cools.
