Method
- Cook pasta in salted boiling water until al dente. Drain and set aside.
- Melt butter in a saucepan. Whisk cornstarch with a splash of cold milk, then add to pan with remaining milk, salt, garlic powder, and mustard powder. Simmer until thickened, about 2 minutes. Remove from heat and stir in both cheeses until smooth.
- Add drained pasta to the sauce, toss to coat, and serve immediately.
Notes
Serve this mac and cheese right away while the sauce is at its stretchiest. It doesn’t need any resting time, so bring it straight to the table.
