Creamy Mashed Potato Soup Recipe

Ingredients
  

  • 3 cups leftover mashed potatoes
  • 2 tbsp unsalted butter
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 3 cups chicken or vegetable broth
  • 1 cup whole milk
  • 1 cup shredded sharp cheddar cheese
  • 1/2 tsp kosher salt, plus more to taste
  • 1/4 tsp freshly ground black pepper
  • Toppings: 4 strips cooked bacon, crumbled; 2 scallions, thinly sliced; 1/4 cup sour cream

Method
 

  1. Melt butter in a large pot over medium heat. Sauté onion and a pinch of salt until soft, about 5 minutes. Stir in garlic and cook 30 seconds.
  2. Pour in broth and add mashed potatoes. Whisk until potatoes dissolve. Bring to a gentle simmer and cook 10 minutes.
  3. Blend with an immersion blender until smooth, about 1 minute, or leave chunky if you prefer.
  4. Reduce heat to low. Stir in milk and cheddar until melted, 2 to 3 minutes. Do not boil. Adjust salt and pepper.
  5. Ladle soup into bowls and top with bacon, scallions, sour cream, and extra cheese. Serve immediately.

Notes

Leftover mashed potatoes that contain cream cheese or sour cream work wonderfully here; they add extra richness. If you like a thinner soup, stir in an extra 1/2 cup broth or milk after adding the cheese.
