- Cook the pasta in salted boiling water until al dente. Reserve 1 cup pasta water, then drain.
- Warm the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and cook 30 seconds until fragrant.
- Add the drained salmon, break it into large chunks, and cook 1-2 minutes just to warm through.
- Stir in the lemon juice, lemon zest, and heavy cream. Simmer gently for 2 minutes until the sauce thickens slightly.
- Toss in the drained pasta and Parmesan, adding splashes of pasta water as needed to create a glossy sauce. Serve with parsley.
Notes
If your canned salmon contains skin and bones, remove them before flaking into the pan. This dish is best right away; when reheating leftovers, add a splash of milk to loosen the sauce and warm it slowly.
