Creamy Lemon Garlic Canned Salmon Pasta Recipe

Ingredients
  

  • 12 oz dried pasta (penne or spaghetti)
  • 2 (5 oz) cans canned salmon, drained
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • ½ tsp red pepper flakes (optional)
  • ⅓ cup fresh lemon juice
  • 1 tbsp lemon zest
  • ¾ cup heavy cream
  • ½ cup grated Parmesan, plus extra for serving
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish

Method
 

  1. Cook the pasta in salted boiling water until al dente. Reserve 1 cup pasta water, then drain.
  2. Warm the olive oil in a large skillet over medium heat. Add the garlic and red pepper flakes and cook 30 seconds until fragrant.
  3. Add the drained salmon, break it into large chunks, and cook 1-2 minutes just to warm through.
  4. Stir in the lemon juice, lemon zest, and heavy cream. Simmer gently for 2 minutes until the sauce thickens slightly.
  5. Toss in the drained pasta and Parmesan, adding splashes of pasta water as needed to create a glossy sauce. Serve with parsley.

Notes

If your canned salmon contains skin and bones, remove them before flaking into the pan. This dish is best right away; when reheating leftovers, add a splash of milk to loosen the sauce and warm it slowly.
