Creamy Ground Beef Orzo Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 cup uncooked orzo
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 2 cups beef broth
  • 1 tsp Italian seasoning
  • Salt and black pepper
  • 4 oz cream cheese, cubed and softened
  • 2 cups fresh baby spinach
  • Grated Parmesan cheese, for serving

Method
 

  1. Brown the ground beef in a large skillet over medium-high heat, about 5 to 7 minutes. Drain most of the fat and season with salt and pepper.
  2. Add the onion and cook until softened, 3 to 4 minutes. Stir in the garlic and cook 30 seconds more.
  3. Add the orzo and toast, stirring frequently, for 1 to 2 minutes until lightly golden.
  4. Pour in the diced tomatoes, beef broth, and Italian seasoning. Bring to a boil, then cover, reduce heat, and simmer 10 to 12 minutes until orzo is tender.
  5. Remove from heat. Stir in the cream cheese and spinach until melted and wilted. Serve in bowls with Parmesan on top.

Notes

The orzo will thicken as it sits. If you plan to make it ahead, wait to stir in the cream cheese until after reheating, and add a splash of broth to loosen the sauce back up.
