Ingredients
Method
- Preheat oven to 400°F (200°C). Beat cream cheese, Parmesan, garlic, parsley, oregano, salt, and pepper until smooth.
- Cut a deep pocket into each chicken breast and fill with 2 heaping tablespoons of the mixture. Season the outside lightly with more salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken smooth side down for 3-4 minutes, flip, and sear second side for 2 minutes.
- Transfer skillet to oven and bake 15-18 minutes, until chicken reaches 165°F (74°C). Rest on a cutting board.
- Place skillet over medium heat, add butter, scrape up browned bits, then stir in broth. Simmer until reduced by half, about 3 minutes. Slice chicken, spoon sauce over, and serve.
Notes
The filling can puff out a tiny bit during baking, so don’t panic if you see a little white on the pan — it still tastes great. This dish needs no resting time beyond the few minutes it takes to make the sauce.
