Ingredients
Method
- Cook the linguine in salted boiling water until al dente. Reserve ¼ cup pasta water before draining.
- Pat shrimp dry, season with salt and pepper, then sear in olive oil over medium-high heat for about 2 minutes per side until pink. Remove to a plate.
- Melt butter in the same skillet over medium heat. Cook garlic for 30–60 seconds, then add cream and simmer. Whisk in Parmesan until smooth, then stir in pasta water and season lightly.
- Return the pasta and shrimp to the skillet and toss over low heat for 1 minute. Add more pasta water if needed. Serve in warm bowls topped with parsley.
Notes
If you want a thinner sauce, stir in pasta water a tablespoon at a time until it reaches the consistency you like. The shrimp can be peeled, deveined, and refrigerated up to 2 hours ahead to save time at dinner.
