- Season the chicken thighs with salt and pepper. Heat olive oil in a large skillet over medium-high heat, sear the thighs for about 4 minutes per side until golden, then transfer to a plate.
- Lower the heat to medium, add the garlic, and cook for 30 seconds. Pour in the chicken broth and scrape up browned bits from the pan.
- Stir in the heavy cream and pasta. Bring to a simmer and cook for 12 to 14 minutes, stirring occasionally, until the pasta is tender and the sauce thickens. Slice the chicken while the pasta cooks.
- Return the sliced chicken and any juices to the skillet. Stir in the Parmesan until melted, then serve right away with extra Parmesan and parsley.
Notes
If the sauce thickens too much before serving, stir in a splash of warm broth or milk to loosen it. Freshly grated Parmesan melts the smoothest, so it's worth the extra minute.
