Method
- Pat chicken dry and season both sides with salt, pepper, and garlic powder.
- Heat 1 tbsp butter in a large skillet over medium-high. Sear chicken for about 5 minutes per side until deep golden and 160°F inside. Transfer to a plate.
- Reduce heat to medium, add remaining 1 tbsp butter and garlic, and stir for 30 seconds. Pour in broth, scrape up browned bits, then add cream and simmer 2 minutes until slightly thickened. Stir in Parmesan until melted.
- Return chicken to the pan, coat in sauce, then plate and spoon more sauce over each breast. Serve immediately.
Notes
If your chicken breasts are thicker than 1 inch, slice them in half horizontally before seasoning to ensure they cook through without burning the outside. Let the chicken come to room temperature for about 15 minutes while you prep the other ingredients; it sears more evenly that way.
