- Season the chicken breasts with salt and pepper. Melt 1 tablespoon butter in a large skillet over medium-high heat. Sear the chicken for about 4 minutes per side until golden, then transfer to a plate.
- Lower the heat to medium and add the remaining 1 tablespoon butter. Cook the garlic for 30 seconds until fragrant, then pour in the chicken broth and scrape up the browned bits. Stir in the heavy cream, Parmesan, and thyme, and whisk until smooth. Simmer for 2 to 3 minutes to thicken.
- Return the chicken to the skillet and spoon some sauce over the top. Reduce the heat to medium-low and simmer for about 4 minutes, or until the chicken reaches 165°F in the thickest part.
- Plate the chicken and spoon a generous amount of sauce over each piece. Finish with fresh parsley and serve hot.
Notes
If your chicken breasts are quite thick, you may need to simmer an extra minute or two. This dish does not require resting time; serve it right away while the sauce is loose and glossy.
