Creamy Dominican Potato Salad Recipe

Ingredients
  

  • 1.5 lbs Yukon Gold potatoes
  • 2 medium carrots
  • 3 large eggs
  • 1 (15 oz) can whole beets, drained
  • 1/2 cup sweet peas, drained
  • 1/2 medium red onion
  • 1/2 cup mayonnaise
  • 2 tbsp white vinegar
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Boil potatoes and carrots in salted water until tender, about 8 to 10 minutes. Drain and spread to cool. Hard-boil the eggs separately for 10 minutes.
  2. Dice the drained beets and finely chop the red onion. Drain the peas.
  3. Once cooled, dice the carrots and combine with potatoes, beets, onion, peas, and chopped eggs. Add mayonnaise, vinegar, salt, and pepper, then fold gently.
  4. Spoon into a serving bowl, garnish with sliced egg and paprika, and serve or chill for at least an hour.

Notes

If you prefer a less intense pink, rinse the diced beets briefly before adding them, but the color is what makes the dish recognizable. The salad can be served right away, but letting it rest in the fridge helps the flavors come together.
