Creamy Dill Pickle Potato Salad Recipe

Ingredients
  

  • 2 lb Yukon Gold potatoes
  • 3/4 cup chopped dill pickles
  • 1/2 cup diced celery
  • 1/4 cup finely chopped red onion
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tbsp dill pickle juice
  • 1 tbsp Dijon mustard
  • 1/4 cup chopped fresh dill, divided
  • Salt and black pepper, to taste

Method
 

  1. Bring a pot of salted water to a boil, add potatoes, and cook until fork-tender, 12 to 15 minutes. Drain and let cool slightly, keeping them warm.
  2. In a large bowl, whisk mayonnaise, sour cream, pickle juice, mustard, salt, and pepper. Stir in pickles, celery, red onion, and half the dill.
  3. Cut warm potatoes into bite-sized chunks, add to the dressing, and fold gently to coat. Let sit at room temperature for 10 minutes.
  4. Fold in remaining fresh dill, transfer to a serving bowl, garnish with extra pickle slices, and serve cool or at room temperature.

Notes

If the salad tightens up after chilling, revive it with a tablespoon of pickle juice or a splash of milk. The potatoes stay creamy and soak up even more flavor overnight.
