- Lay chicken thighs in the slow cooker in a single layer. Season with Italian seasoning, salt, and pepper.
- Whisk chicken broth, lemon juice, lemon zest, and garlic, then pour over the chicken. Dot with butter.
- Cover and cook on low 4-5 hours or high 2-3 hours until chicken reaches 165°F and shreds easily.
- Remove chicken. Whisk cornstarch slurry and heavy cream into the juices, cook covered on high 15 minutes to thicken, then pour sauce over the chicken and serve.
Notes
This dish works on either low or high just as well; adjust timing to your schedule. If you like a deeper lemon kick, stir in the juice of an extra half lemon right before serving. Garnish with fresh parsley or lemon slices to make it look as good as it tastes.
