Creamy Crockpot French Onion Chicken Recipe

Ingredients
  

  • 2 lbs boneless skinless chicken breasts
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 (1 oz) packet French onion soup mix
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 4 oz cream cheese, softened
  • 1 cup shredded gruyère cheese
  • 12 oz egg noodles, cooked and tossed with 2 tbsp butter

Method
 

  1. Season chicken with salt and pepper. Sear in olive oil over medium-high heat for 4 minutes per side. Set aside.
  2. Melt butter in the same skillet. Add sliced onions and a pinch of salt, cook 8 to 10 minutes until soft and lightly golden. Stir in garlic for 1 minute. Deglaze with a splash of broth.
  3. Transfer onions to a slow cooker. Stir in soup mix, remaining broth, and Worcestershire. Nestle chicken into the mixture and spoon liquid over the top.
  4. Cook on low for 4 hours. Remove chicken, shred with two forks, return to the crock. Stir in cream cheese cubes until smooth. Top with shredded gruyère, cover, and let melt for 10 minutes.
  5. Spoon the chicken and sauce over buttered egg noodles and serve immediately.

Notes

Cook time can stretch to 6 hours on low for an even softer texture, just keep an eye on the chicken so it doesn’t dry out. Be sure to soften the cream cheese at room temperature first for a lump-free sauce. If the sauce looks too thin after shredding, let it cook uncovered on high for 15 minutes to reduce.
