Creamy Crockpot Chicken Tortellini Recipe

Ingredients
  

  • 1 1/2 lbs boneless skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 4 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp dried Italian seasoning
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 3 tbsp unsalted butter, cut into pieces
  • 8 oz cream cheese, cubed
  • 9 oz refrigerated cheese tortellini
  • 5 oz fresh baby spinach
  • 1/2 cup grated Parmesan cheese, plus more for serving

Method
 

  1. Place chicken breasts in a 6-quart slow cooker. Season with onion powder, Italian seasoning, salt, and pepper. Add butter, garlic, and pour broth around the chicken.
  2. Cover and cook on low for 4 to 5 hours or high for 2 to 3 hours, until chicken shreds easily.
  3. Remove chicken, shred, and return to the slow cooker. Stir in cream cheese until melted, then add tortellini. Cover and cook on high 15 to 20 minutes, stirring once, until tender.
  4. Stir in spinach and Parmesan until the spinach wilts. Ladle into bowls and top with extra Parmesan.

Notes

If the sauce seems too thick after adding the tortellini, thin it with a splash of warm broth. For a little heat, add a pinch of red pepper flakes when serving.
