Creamy Crockpot Chicken Spaghetti Recipe

Ingredients
  

  • 1.5 lbs boneless skinless chicken breasts
  • 8 oz spaghetti, broken in half
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (10 oz) can Rotel diced tomatoes with green chilies, undrained
  • 8 oz block cream cheese, cut into cubes
  • 1 cup chicken broth
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • 1 cup shredded Colby jack cheese

Method
 

  1. Place chicken, soups, Rotel, broth, onion powder, garlic powder, and pepper in a slow cooker. Cook on low 4-5 hours until chicken shreds easily.
  2. Remove chicken, shred with two forks, return to the slow cooker, and stir.
  3. Add broken spaghetti and cream cheese cubes. Cover and cook on high 20-30 minutes, stirring once, until pasta is tender and sauce is creamy.
  4. Top with shredded cheese, cover 5 minutes until melted, then stir and serve hot.

Notes

Crockpot models can run hotter or cooler, so check the spaghetti at 20 minutes to avoid overcooking. If you like a little more tang, stir in a squeeze of fresh lemon juice right before serving.
