Method
- Pat chicken dry and season with 1 tbsp Cajun seasoning and salt.
- Sear chicken in a hot skillet, about 3 minutes per side, until browned.
- Layer peppers and onion in the slow cooker, add chicken, remaining Cajun seasoning, and garlic. Whisk cream cheese, cream, and broth; pour over top. Set to low.
- Cover and cook on low 6-8 hours or high 3-4 hours, until chicken is tender.
- Shred chicken in the pot, add cooked penne and half the Parmesan. Toss well. Taste and adjust salt, then serve with remaining Parmesan and parsley.
Notes
If your slow cooker runs hot, check at the early end of the time range to keep the chicken moist. This dish benefits from a brief rest off the heat before serving, but it's not required.
