Creamy Cottage Cheese Sandwich Recipe

Ingredients
  

  • 8 oz (1 cup) full-fat cottage cheese
  • 2 tbsp finely chopped fresh chives
  • 1 tbsp chopped fresh dill
  • 1 tsp lemon juice
  • 1 tbsp extra-virgin olive oil
  • Salt and black pepper
  • 4 slices whole-grain or sourdough bread
  • 1 small cucumber, sliced thin
  • 4 radishes, sliced thin
  • Handful of arugula or baby spinach

Method
 

  1. In a medium bowl, mix the cottage cheese, chives, dill, lemon juice, and olive oil. Season with salt and pepper and stir until well combined.
  2. Thinly slice the cucumber and radishes.
  3. Toast the bread slices in a skillet over medium heat or in a toaster until golden, about 2 minutes per side.
  4. Spread a generous layer of the cottage cheese mixture onto two toasted bread slices. Top with arugula, cucumber, and radish, then place the remaining bread slices on top. Serve right away.

Notes

If your cottage cheese has a lot of liquid on top, drain it before mixing to keep the spread thick and prevent soggy bread. Assemble the sandwiches right before eating; the spread can be made ahead, but the bread and vegetables are best fresh.
