Creamy Cottage Cheese Quiche Recipe

Ingredients
  

  • 1 9-inch deep-dish pie crust, chilled
  • 4 thick-cut bacon slices, cut into ½-inch pieces
  • 3 cups packed fresh baby spinach, roughly chopped
  • 6 large eggs
  • 1 cup full-fat cottage cheese
  • ½ cup whole milk
  • 1 cup sharp cheddar, shredded
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • Pinch ground nutmeg (optional)

Method
 

  1. Preheat oven to 375°F. Line the crust with parchment and pie weights. Bake 10 minutes, remove weights, and bake 5 minutes more until dry and lightly golden.
  2. Cook bacon in a skillet over medium heat for 6–8 minutes until crisp. Drain on paper towel, reserve 1 tbsp drippings. Sauté spinach in the drippings for 1 minute until wilted; cool slightly.
  3. Whisk eggs for 1 minute until combined. Add cottage cheese, milk, cheddar, salt, pepper, and nutmeg; whisk smooth. Fold in bacon and spinach.
  4. Place crust on a baking sheet, pour in filling. Bake 35–40 minutes until edges are puffed and centre jiggles slightly.
  5. Cool on a wire rack for 10 minutes, then slice and serve warm.

Notes

If the quiche puffs up a lot in the oven, it will settle as it cools and be just as creamy. For a deeper fill, use a 9.5-inch pie dish and extend the bake time by about 5 minutes.
