Creamy Chipped Beef on Toast Recipe

Ingredients
  

  • 4 oz dried chipped beef
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 1/2 tsp freshly ground black pepper
  • Pinch of cayenne pepper
  • 1/2 tsp Worcestershire sauce
  • 4 thick slices sturdy bread
  • Unsalted butter or oil for toasting

Method
 

  1. Rinse the dried beef under cold water for 30 seconds, tear into bite-size strips, and drain well.
  2. Melt butter in a skillet over medium heat, whisk in flour, and cook the roux for 90 seconds.
  3. Slowly whisk in milk, bring to a simmer, and cook until thickened, about 4 minutes.
  4. Stir in the beef, black pepper, cayenne, and Worcestershire sauce, then cook 2 minutes more.
  5. Toast the bread in a buttered skillet until golden and crisp.
  6. Spoon the hot creamy beef over the toast, add extra pepper, and serve immediately.

Notes

If your dried beef is especially salty, soak it in warm water for 5 minutes after rinsing, then drain well before adding to the sauce. The toast is best made at the last second to stay crunchy under the sauce.
