Method
- Melt butter in a large pot over medium heat. Add onion, carrots, and celery with a pinch of salt and cook until softened, about 6 to 7 minutes.
- Add garlic and cook 1 minute. Sprinkle flour over vegetables and stir constantly for 2 minutes until golden.
- Slowly whisk in broth, then add chicken breasts, rice, thyme, salt, and pepper. Bring to a boil, reduce to low, cover, and simmer for 25 to 30 minutes until chicken is cooked and rice is tender.
- Remove chicken, shred with two forks, and return to pot. Stir in half-and-half and warm through for 3 to 5 minutes. Do not boil.
- Ladle into bowls and top with fresh parsley. Serve hot.
Notes
If using 100% wild rice instead of a blend, the simmer time may increase to about 45 minutes. Add an extra splash of broth if the soup thickens too much during storage.
