- Cut chicken into half-inch cubes, season with salt and pepper, and sear in oil over medium-high heat until golden on both sides, about 5 minutes total. Transfer to a plate.
- Lower heat to medium, cook onion until soft, then stir in garlic for 30 seconds. Melt in cream cheese with broth until smooth, then mix in sour cream, green chiles, cumin, and chili powder.
- Return chicken to the sauce and simmer gently, stirring, until thickened and coating the meat, 4 to 5 minutes.
- Warm tortillas on a dry skillet, fill with creamy chicken, and top with lettuce, tomato, and cheese.
Notes
Diced chicken breasts work well if that is what you have, but watch the cook time so they stay tender. The filling can be made a day ahead and rewarmed slowly with a splash of broth to restore the creamy texture.
