Creamy Chicken Sausage Orzo Skillet Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 12 oz fully cooked chicken sausage, sliced ½-inch thick
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup (8 oz) orzo pasta
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese, plus extra for serving
  • 3 cups fresh baby spinach
  • 1 tbsp fresh lemon juice
  • Salt and black pepper

Method
 

  1. Brown the sausage: heat oil over medium-high, cook sausage 4 minutes per side until golden, then remove to a plate.
  2. Sauté the aromatics: reduce heat to medium, cook onion 3-4 minutes until soft, add garlic 30 seconds.
  3. Toast the orzo: stir in orzo and toast 1-2 minutes until lightly golden and nutty.
  4. Simmer with broth and cream: pour in broth and cream, bring to a simmer, cover, reduce heat to low, and cook 10-12 minutes until orzo is tender and liquid is mostly absorbed, stirring once halfway.
  5. Wilt the spinach and serve: off heat, stir in spinach until wilted, then stir in Parmesan, lemon juice, and sausage. Season to taste and serve warm.

Notes

If the sauce thickens too much while you’re getting the table ready, stir in a couple of tablespoons of warm broth right before serving to loosen it back up. A little extra Parmesan on top goes a long way here.
