Creamy Chicken Pasta Recipe

Ingredients
  

  • 1 lb boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 tsp salt, divided
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated parmesan cheese, plus more for serving
  • 8 oz short pasta, cooked and drained, 1/2 cup pasta water reserved
  • Fresh parsley, for serving

Method
 

  1. Season chicken with 3/4 tsp salt and pepper. Sear in oil over medium-high heat for about 5 to 6 minutes until golden and cooked to 165°F. Remove from pan.
  2. In the same pan, cook garlic 30 seconds, then add broth and cream. Simmer 2 to 3 minutes until slightly thickened. Off heat, stir in parmesan and remaining 1/4 tsp salt.
  3. Add cooked pasta, reserved pasta water if needed, and chicken to the sauce. Toss over low heat until coated.
  4. Serve in bowls with extra parmesan and parsley on top.

Notes

Pull the chicken from the fridge 10 minutes before cooking so it sears evenly. Grate the parmesan from a block for the smoothest sauce, and save that pasta water before you drain it; it’s the easiest way to fix a sauce that feels too thick.
