- Season chicken with 3/4 tsp salt and pepper. Sear in oil over medium-high heat for about 5 to 6 minutes until golden and cooked to 165°F. Remove from pan.
- In the same pan, cook garlic 30 seconds, then add broth and cream. Simmer 2 to 3 minutes until slightly thickened. Off heat, stir in parmesan and remaining 1/4 tsp salt.
- Add cooked pasta, reserved pasta water if needed, and chicken to the sauce. Toss over low heat until coated.
- Serve in bowls with extra parmesan and parsley on top.
Notes
Pull the chicken from the fridge 10 minutes before cooking so it sears evenly. Grate the parmesan from a block for the smoothest sauce, and save that pasta water before you drain it; it’s the easiest way to fix a sauce that feels too thick.
