Creamy Chicken Mushroom Pasta Recipe

Ingredients
  

  • 8 oz penne pasta
  • 1 lb boneless skinless chicken breasts
  • 8 oz cremini mushrooms, sliced
  • 1/2 cup diced yellow onion
  • 2 garlic cloves, minced
  • 1 tbsp unsalted butter
  • 1 tbsp olive oil
  • 3/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup reserved pasta water
  • Salt and black pepper
  • Fresh parsley, chopped, for serving

Method
 

  1. Season the chicken with salt and pepper. Sear in olive oil over medium-high heat for about 4 minutes per side until golden. Transfer to a plate; it will not be fully cooked through.
  2. Melt the butter in the same skillet, add mushrooms, and cook undisturbed for 3 to 4 minutes. Stir and cook 2 more minutes. Add onion and garlic, cooking 2 minutes. Meanwhile, boil pasta to al dente, reserving 1/4 cup pasta water.
  3. Pour in the heavy cream, scraping up browned bits, and simmer 2 minutes. Stir in the Parmesan and pasta water, cooking 1 minute until the sauce thickens. Season to taste.
  4. Slice the chicken, add it and the drained pasta to the sauce, and toss over low heat for 1 to 2 minutes. Finish with parsley and serve with extra Parmesan.

Notes

For extra veg, toss in a handful of baby spinach at the end. The sauce will thicken as it sits; add a splash of reserved pasta water or milk when reheating.
