Creamy Chicken Breast Recipe

Ingredients
  

  • 4 boneless, skinless chicken breasts, about 6 oz each
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 2 tbsp unsalted butter
  • 4 garlic cloves, minced
  • ½ cup low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ cup chopped fresh parsley

Method
 

  1. Season chicken breasts with ½ tsp salt and the pepper. Melt butter in a large skillet over medium-high heat. Sear chicken for about 4 minutes per side until golden and 160°F. Transfer to a plate.
  2. Add minced garlic to the skillet and cook 30 seconds. Pour in chicken broth and scrape up browned bits. Simmer 1 minute, then stir in heavy cream and remaining ½ tsp salt. Reduce heat to medium-low and simmer 3 to 4 minutes.
  3. Stir Parmesan into the sauce until melted. Return chicken to the skillet, spoon sauce over top, and simmer 1 to 2 minutes until chicken reaches 165°F.
  4. Plate chicken, ladle sauce over each piece, and top with parsley.

Notes

If your chicken breasts are thick, pound them to about ½ inch evenness before seasoning so they cook through without the outside burning. The sauce will continue to thicken as it sits, so serve it right after spooning it over the chicken.
