Creamy Chicken Breast Casserole Recipe

Ingredients
  

  • 1.5 lbs boneless skinless chicken breasts (about 3 medium)
  • 3 cups fresh broccoli florets
  • 2 cups cooked white rice
  • 3 tbsp unsalted butter
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 cup whole milk
  • 1 tsp Dijon mustard
  • 1.5 cups shredded sharp cheddar cheese
  • Salt and black pepper

Method
 

  1. Preheat oven to 375°F (190°C). Season chicken with salt and pepper, then sear in a hot oiled skillet for about 4 minutes per side until golden. Remove and set aside.
  2. Melt butter in the skillet, add onion and cook 3-4 minutes until soft. Add garlic and cook 30 seconds.
  3. Whisk in flour and cook 1 minute. Gradually whisk in broth, milk, and Dijon. Simmer 5-7 minutes until thickened. Stir in half the cheese and season with pepper and salt.
  4. Spread rice in a 9x13 dish, top with broccoli, slice chicken and arrange on top. Pour sauce over, sprinkle remaining cheese. Bake 25-30 minutes until bubbly and golden.
  5. Rest 5 minutes, then scoop onto plates and serve hot.

Notes

Let the casserole rest a few minutes before serving so the sauce thickens slightly. The chicken is safe to eat when an instant-read thermometer inserted in the thickest strip reaches 165°F (74°C).
