- Season the chicken with salt and pepper. Sear in olive oil over medium-high heat for about 5 minutes per side until golden, then remove to a plate.
- Melt the butter in the same skillet. Sauté the mushrooms undisturbed for 2 minutes, then stir and cook 5 minutes total until caramelized.
- Add garlic and cook 30 seconds. Pour in broth, scrape up browned bits, and simmer 1 minute. Reduce heat to medium-low and stir in cream, Parmesan, and thyme; simmer 2 minutes until slightly thickened.
- Return chicken and juices to the skillet. Spoon sauce over the top and simmer over low heat 5 to 7 minutes, until internal temperature hits 165°F (74°C).
- Plate the chicken, spoon the mushrooms and sauce over top, and garnish with extra thyme. Serve hot.
Notes
Pound the chicken to an even thickness before you start; this is the single biggest factor for moist, evenly cooked breasts. If the sauce thickens too much as it sits, stir in a splash of broth or cream when reheating to bring it back to a silky consistency.
