Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs), pounded to even ½-inch thickness
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ⅓ cup grated Parmesan
  • 1 tsp fresh thyme leaves, plus extra for serving
  • Salt and black pepper

Method

  1. Season the chicken with salt and pepper. Sear in olive oil over medium-high heat for about 5 minutes per side until golden, then remove to a plate.
  2. Melt the butter in the same skillet. Sauté the mushrooms undisturbed for 2 minutes, then stir and cook 5 minutes total until caramelized.
  3. Add garlic and cook 30 seconds. Pour in broth, scrape up browned bits, and simmer 1 minute. Reduce heat to medium-low and stir in cream, Parmesan, and thyme; simmer 2 minutes until slightly thickened.
  4. Return chicken and juices to the skillet. Spoon sauce over the top and simmer over low heat 5 to 7 minutes, until internal temperature hits 165°F (74°C).
  5. Plate the chicken, spoon the mushrooms and sauce over top, and garnish with extra thyme. Serve hot.

Notes

Pound the chicken to an even thickness before you start; this is the single biggest factor for moist, evenly cooked breasts. If the sauce thickens too much as it sits, stir in a splash of broth or cream when reheating to bring it back to a silky consistency.
