- Blanch beans in salted boiling water for 3 to 4 minutes until bright and tender-crisp, then shock in ice water, drain, and pat dry.
- Melt 2 tbsp butter in a saucepan over medium heat, whisk in flour and cook 1 minute. Slowly whisk in milk, then add garlic powder, onion powder, salt, pepper, and nutmeg. Simmer until thickened, about 3 to 4 minutes. Remove from heat and stir in cheddar and 1/4 cup parmesan.
- Preheat oven to 375°F (190°C) and grease a 1.5-quart baking dish. Fold blanched beans into the sauce, transfer to the dish, and spread evenly. Mix panko with 2 tbsp melted butter and 2 tbsp parmesan, sprinkle over the top, and add extra cheddar if you like.
- Bake 20 to 25 minutes until sauce is bubbling and topping is deep golden. Tent with foil if browning too fast.
- Rest 5 minutes, then scoop onto plates and serve hot.
Notes
Let the casserole rest a few minutes so the sauce thickens and holds its shape when you scoop. Assemble ahead without the topping and refrigerate overnight; add the topping just before baking and increase bake time by 5 to 10 minutes.
