Ingredients
  

  • 1 lb fresh green beans, trimmed
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt, plus more for blanching water
  • 1/8 tsp black pepper
  • Pinch of ground nutmeg
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup plus 2 tbsp grated parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 tbsp melted butter
  • Cooking spray or extra butter for greasing

Method
 

  1. Blanch beans in salted boiling water for 3 to 4 minutes until bright and tender-crisp, then shock in ice water, drain, and pat dry.
  2. Melt 2 tbsp butter in a saucepan over medium heat, whisk in flour and cook 1 minute. Slowly whisk in milk, then add garlic powder, onion powder, salt, pepper, and nutmeg. Simmer until thickened, about 3 to 4 minutes. Remove from heat and stir in cheddar and 1/4 cup parmesan.
  3. Preheat oven to 375°F (190°C) and grease a 1.5-quart baking dish. Fold blanched beans into the sauce, transfer to the dish, and spread evenly. Mix panko with 2 tbsp melted butter and 2 tbsp parmesan, sprinkle over the top, and add extra cheddar if you like.
  4. Bake 20 to 25 minutes until sauce is bubbling and topping is deep golden. Tent with foil if browning too fast.
  5. Rest 5 minutes, then scoop onto plates and serve hot.

Notes

Let the casserole rest a few minutes so the sauce thickens and holds its shape when you scoop. Assemble ahead without the topping and refrigerate overnight; add the topping just before baking and increase bake time by 5 to 10 minutes.
