Method
- Melt butter in a large pot over medium heat. Add onion and cook until soft, 5 minutes. Stir in garlic and cook 30 seconds.
- Add cabbage, potato, broth, and thyme. Stir and bring to a simmer.
- Reduce heat to low, cover partially, and simmer until cabbage and potato are very tender, about 20 minutes.
- Remove thyme sprigs. Puree with an immersion blender until smooth, or blend in batches in a countertop blender.
- Stir in heavy cream and warm through, about 2 minutes. Season with salt and pepper. Ladle into bowls and drizzle with extra cream if desired.
Notes
If the soup feels too thick after blending, add a splash of broth to loosen it. For an even richer result, swap half the cream for sour cream stirred in off the heat.
