Creamy Cabbage Soup Recipe

Ingredients
  

  • 2 tbsp unsalted butter
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 medium russet potato, peeled and cubed
  • 4 cups low-sodium vegetable or chicken broth
  • 1 small green cabbage, shredded (about 8 cups)
  • 2 sprigs fresh thyme or ½ tsp dried thyme
  • ½ cup heavy cream
  • salt and black pepper

Method
 

  1. Melt butter in a large pot over medium heat. Add onion and cook until soft, 5 minutes. Stir in garlic and cook 30 seconds.
  2. Add cabbage, potato, broth, and thyme. Stir and bring to a simmer.
  3. Reduce heat to low, cover partially, and simmer until cabbage and potato are very tender, about 20 minutes.
  4. Remove thyme sprigs. Puree with an immersion blender until smooth, or blend in batches in a countertop blender.
  5. Stir in heavy cream and warm through, about 2 minutes. Season with salt and pepper. Ladle into bowls and drizzle with extra cream if desired.

Notes

If the soup feels too thick after blending, add a splash of broth to loosen it. For an even richer result, swap half the cream for sour cream stirred in off the heat.
