Creamy Broccoli Cheddar Casserole Recipe

Ingredients
  

  • 2 lbs broccoli crowns, cut into bite-size florets
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded extra-sharp cheddar cheese
  • ½ tsp mustard powder
  • ½ tsp kosher salt
  • ¼ tsp freshly ground black pepper
  • 1 cup crushed buttery round crackers
  • 2 tbsp melted butter

Method
 

  1. Steam the broccoli florets for 4–5 minutes until bright green and crisp-tender, then drain and dry on a towel.
  2. Melt the butter in a saucepan, whisk in the flour, and cook 1 minute. Slowly whisk in the milk, cook until thickened, then off heat stir in the cheese, mustard powder, salt, and pepper.
  3. Arrange the broccoli in a 2-quart baking dish, pour the cheese sauce over it, and gently stir to coat.
  4. Preheat oven to 375°F (190°C). Mix the crushed crackers with the melted butter and scatter over the casserole. Bake 25 to 30 minutes until bubbly and golden.
  5. Let the casserole rest 5 minutes, then serve hot.

Notes

If the sauce seems too thick after adding the cheese, whisk in a splash of milk. If your broccoli is very wet, the bake may need an extra 5 minutes to set properly.
