Creamy Boursin Spaghetti Squash Recipe

Ingredients
  

  • 1 medium spaghetti squash, about 2 1/2 pounds
  • 1 (5.2 oz) package Boursin Garlic & Fine Herbs cheese, softened
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons grated Parmesan cheese
  • Chopped fresh parsley, for serving

Method
 

  1. Preheat the oven to 400°F (200°C). Halve the squash lengthwise, scoop out the seeds, brush the cut sides with olive oil, and season with salt and pepper.
  2. Place the halves cut-side down on a parchment-lined baking sheet and roast until fork-tender, 35 to 45 minutes.
  3. Flip the squash, scrape the strands loose with a fork, and add the Boursin and Parmesan. Fold everything together inside the shells until creamy.
  4. Broil 5 inches from the heat for 3 to 4 minutes until bubbly and golden. Sprinkle with parsley and serve immediately.

Notes

If your squash strands release a lot of liquid while scraping, pour off the excess before adding the cheese so the final dish stays creamy rather than soupy. Room-temperature Boursin mixes in much more easily, so take it out of the fridge when you preheat the oven.
