- Brown the beef over medium-high heat in a deep skillet for 5-6 minutes, then drain excess fat.
- Add the onion and cook 3-4 minutes until soft. Stir in garlic, tomato paste, Italian seasoning, salt, and pepper; cook 1 minute.
- Pour in the beef broth, scrape the bottom, then add the pasta. Bring to a boil, cover, reduce heat to low, and simmer 10-12 minutes until tender.
- Remove from heat, stir in the sour cream and Parmesan, then let rest 2 minutes to thicken.
- Spoon into bowls, top with extra Parmesan and parsley, and serve hot.
Notes
Let the sour cream sit on the counter for 10 minutes before you start to take the chill off. Cold sour cream can seize up when it hits warm pasta, so a quick tempering makes a smoother sauce. If the pasta absorbs all the broth before it is tender, add a splash of hot water and continue cooking.
