- Cook the ground beef in a skillet over medium-high heat, breaking it apart, until no longer pink, about 5-6 minutes. Drain excess fat.
- Reduce heat to low. Add the cream cheese and drained Rotel, stirring until the cream cheese melts and the mixture is smooth, about 2-3 minutes.
- Stir in the cheddar, chili powder, cumin, garlic powder, and a pinch of salt. Continue stirring over low heat until the cheese is fully melted and the dip is thick and glossy, about 2 minutes.
- Spoon the hot dip into a serving bowl, top with pickled jalapeños if desired, and serve immediately with tortilla chips.
Notes
Let the cream cheese sit at room temperature while you brown the beef so it melts faster and doesn’t clump. If the dip thickens too much after sitting, stir in a splash of milk over low heat to loosen it.
