- In a large skillet over medium-high heat, cook ground beef, breaking it up, until browned, about 5 minutes. Drain excess fat, leaving about a tablespoon in the pan.
- Reduce heat to medium. Melt butter, then add onion and garlic; cook until softened, 2-3 minutes. Stir in flour and cook 1 minute.
- Pour in beef broth and Worcestershire sauce; scrape up browned bits. Bring to a boil. Add egg noodles, reduce heat to medium-low, cover, and cook until noodles are tender and liquid is mostly absorbed, 8-10 minutes, stirring occasionally.
- Remove from heat. Stir in sour cream until smooth. Season with salt and pepper. Garnish with parsley and serve hot.
Notes
If the sauce thickens too much after stirring in the sour cream, add a splash of warm broth or milk to loosen it. Leftovers will be thicker when chilled; reheat gently with a little liquid.
