- Preheat oven to 400°F (200°C). Season chicken thighs with salt and pepper. Heat oil in a large oven safe skillet over medium high. Sear chicken for about 4 minutes per side until golden, then transfer to a plate.
- Reduce heat to medium. Add garlic and cook 30 seconds. Pour in chicken broth and scrape up browned bits. Whisk in cream, Parmesan, mustard, Italian seasoning, and red pepper flakes. Simmer 2 to 3 minutes until slightly thickened.
- Return chicken to skillet, spoon sauce over top. Bake 20 to 25 minutes until sauce bubbles and chicken reaches 165°F (74°C) internally.
- Switch oven to broil. Broil skillet on top rack for 2 to 3 minutes until sauce is golden in spots. Sprinkle with parsley and serve hot.
Notes
If you want a little extra browning, broil a full 3 minutes and watch closely so the sauce does not burn. Using an oven safe skillet keeps this a one pan meal, but a regular skillet plus a baking dish works just as well.
