Baked Boursin Chicken

Creamy Baked Boursin Chicken Recipe

Ingredients
  

  • 4 boneless skinless chicken breasts (about 1.5 lbs total)
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 (5.2 oz) package Boursin Garlic & Fine Herbs cheese
  • ½ cup low-sodium chicken broth
  • ¼ cup heavy cream
  • 2 tbsp chopped fresh parsley

Method
 

  1. Preheat oven to 400°F (200°C). Pat chicken dry and season with salt and pepper. Heat olive oil in a large ovenproof skillet over medium-high. Sear chicken until deep golden, 3 to 4 minutes per side, then transfer to a plate.
  2. Pour broth and cream into the skillet and scrape up any browned bits. Bring to a simmer, then remove from heat. Return chicken to the skillet. Break the Boursin into chunks and scatter over the chicken and around the pan.
  3. Transfer skillet to the oven and bake until chicken reaches 165°F (74°C), 20 to 25 minutes. Sauce will bubble and thicken slightly.
  4. Remove from oven, spoon the creamy sauce over the chicken, and top with parsley. Serve immediately.

Notes

If you don’t have an ovenproof skillet, sear the chicken in any pan, then transfer everything to a baking dish before adding the liquids and cheese. The sauce will continue to thicken a little as it rests on the table.
