Creamy Avocado Pasta Recipe

Ingredients
  

  • 12 oz dry pasta (penne, rigatoni, or spaghetti)
  • 2 large ripe avocados, pitted and scooped
  • 2 cloves garlic
  • 1/4 cup packed fresh basil leaves
  • 3 tbsp fresh lemon juice
  • 2 tbsp extra-virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/3 cup reserved pasta water
  • halved cherry tomatoes, for serving (optional)

Method
 

  1. Bring a large pot of salted water to a boil. Cook pasta until al dente, about 9 to 11 minutes. Reserve 1/3 cup pasta water, then drain.
  2. In a blender, combine avocados, garlic, basil, lemon juice, olive oil, salt, pepper, and 2 tablespoons reserved pasta water. Blend until smooth, scraping down sides. Adjust seasoning.
  3. Return drained pasta to the pot. Pour avocado sauce over hot pasta, toss to coat, adding more pasta water if needed. Divide into bowls, top with basil and cherry tomatoes, serve immediately.

Notes

Use the ripest avocados you can find; they should give easily when pressed. This pasta is best eaten right away, as the sauce will start to lose its bright green color after about 30 minutes.
