Creamy Alfredo Lasagna Soup Recipe

Ingredients
  

  • 2 tbsp olive oil
  • 1 lb mild Italian sausage, casings removed
  • 1 medium yellow onion, finely chopped
  • 4 garlic cloves, minced
  • 3 tbsp tomato paste
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 4 oz cream cheese, softened and cut into chunks
  • 8 oz broken lasagna noodles
  • 3 cups packed fresh baby spinach
  • 1 cup shredded mozzarella
  • 1/2 cup grated Parmesan
  • Salt and black pepper

Method
 

  1. Heat oil in a large pot over medium-high heat. Brown sausage, breaking it apart, about 5 minutes.
  2. Add onion and cook 3 minutes. Stir in garlic, tomato paste, Italian seasoning, and red pepper flakes and cook 1 minute.
  3. Pour in broth and heavy cream, scraping up browned bits. Add cream cheese; whisk over medium heat until melted and smooth, about 3 minutes. Season lightly with salt and pepper.
  4. Bring to a gentle boil, stir in noodles, and simmer until tender, 8-10 minutes, stirring occasionally.
  5. Remove from heat, add spinach and stir until wilted, about 1 minute. Adjust salt and pepper to taste.
  6. Ladle into bowls, top with mozzarella and Parmesan, and serve hot.

Notes

If you prefer a brothier soup, add an extra 1/2 cup of chicken broth along with the noodles. The pasta absorbs liquid as it sits, so leftovers may need a splash of broth when reheated.
