- Heat oil in a large pot over medium-high heat. Brown sausage, breaking it apart, about 5 minutes.
- Add onion and cook 3 minutes. Stir in garlic, tomato paste, Italian seasoning, and red pepper flakes and cook 1 minute.
- Pour in broth and heavy cream, scraping up browned bits. Add cream cheese; whisk over medium heat until melted and smooth, about 3 minutes. Season lightly with salt and pepper.
- Bring to a gentle boil, stir in noodles, and simmer until tender, 8-10 minutes, stirring occasionally.
- Remove from heat, add spinach and stir until wilted, about 1 minute. Adjust salt and pepper to taste.
- Ladle into bowls, top with mozzarella and Parmesan, and serve hot.
Notes
If you prefer a brothier soup, add an extra 1/2 cup of chicken broth along with the noodles. The pasta absorbs liquid as it sits, so leftovers may need a splash of broth when reheated.
